Poached or Stewed Fruit- Sugar Free and Delicious Recipe!

This recipe makes a really yummy dessert and any leftovers can be added to your porridge the next morning. I always use Granny Smith apples and then add whatever else I have on hand.

Ingredients:

  • 3 Granny Smith apples
  • 2 sticks of rhubarb
  • 1 pear
  • 1 ripe banana
  • 1 1/2 tbsp honey
  • 1 star anise
  • 1/2 tsp cinnamon
  • 4 cloves

Method:

Peel the banana, apples and pear, chop into wedges. Chop the rhubarb into biggish chunks. Put into a saucepan and add the honey and spices, mix. Put onto a med-high heat until fruit is just bubbling and honey has melted. Turn heat right down and put the lid on. Simmer for about 10 minutes (stirring occasionally), or until at the softness you prefer. You don't want it so soft that it's completely falling apart and mushy. Taste and add more honey if needed. I add a dollop of yoghurt but cream would be delicious too. I almost love it more on porridge the next day though!

The batch of fruit below had frozen mixed berries added to it, makes a beautiful colour!
