What I Had For Dinner- Quick and Healthy


Last night I just could not be bothered cooking. But I still wanted something healthy so I made some delicious dark rye toast with avocado and tomato, followed by an almond milk, banana and date smoothie as dessert. Recipe below...


Toast Ingredients-
  • Rye bread (or any other healthy bread, gluten-free would be awesome!)
  • 1 ripe avocado
  • 1 ripe tomato
  • basil leaves
  • parsley leaves
  • rocket
  • lemon juice
  • olive oil
  • salt and pepper
  • sprinkle of dried chives
Just pile all the ingredients up until rocket onto the toast, then drizzle with lemon juice and olive oil. Then sprinkle with chives, salt and pepper.



Smoothie Ingredients-
  • 1 frozen banana
  • 1 or 2 medjool dates (more or less depending on how sweet you like it)
  • almond milk
  • dash of cinnamon
  • 1 tbs of plain yoghurt (optional but it makes it creamier)
  • sprinkle of nutmeg
Whiz all the ingredients up in a blender, pour into a glass and sprinkle with nutmeg. Yum!!
